PROCESS:
Heat wok or skillet to high. Start with sesame oil and quickly add shrimp and chicken, STIR to create a crust. Add onion, carrot, garlic and STIR. Move the shrimp and chicken up the sides of the wok or out of the way and fry the two eggs. When the eggs are scrambled STIR them into the rice. NOW WE'RE COOKIN' Add The Ginger Sauce and STIR. (As promised lots of stirring) Plate the Fried Rice onto two plates. Squeeze the lime juice over the rice, top with fresh chopped cilantro. Eat! GINGER SAUCE 1/2 cup peeled fresh ginger 1 medium onion 1/3 cup fresh cilantro 3/4 cup kikoman soy sauce 1/4 cup rice wine vinegar 1/2 cup salad oil Peel the ginger and onions, cut into small pieces and place into a food processor. Puree, add remaining ingredients and process until smooth, liquified and sauce like.
