PROCESS:
Prepare the Tuna:
Rub the tuna filet with soy sauce and season liberally with Steak Spice or salt and pepper. Run the tuna through a meat grinder or mince with a knife. You may also grill the tuna as steaks.
Ginger Wasabi Mayonaise:
Place mayonnaise in a bowl, add the remaining ingredients, mix well.
Allow the flavors to marry at least 30 minutes before serving.
Form the ground tuna in to small burgers , (or leave the filet whole if you wish) grill on a lightly greased griddle for about one minute on each side. These burgers should be served rare, do not overcook.
To serve:
place the burger in a cocktail bun bottom, top with the ginger wasabi mayonaise, crisp lettuce, sliced tomato, and fresh cilantro.
The top of the bun, I like to place swords or frill picks in the sliders to keep them together.
I recommend Golden Mountain Soy Sauce: It's actually called a "seasoning sauce" and it's available in Oriental Grocery stores...
*You may also use other toppings for these burgers, such as Julienne daikon radish, red bell pepper, carrot, shaved cabbage or try my Big Island Slaw

1 fresh Ahi Tuna filet

1 cup mayonaise
1 tablespoon rice wine vinegar
1/2 lime, juiced
1/2 lemon, juiced
2 tablespoons wasabi powder
2 tablespoons ginger, grated
1/4 teaspoon red chili flakes
3/4 cup fresh cilantro
2 tablespoons soy sauce
pinch of sugar
