Caramelized Onion Blue Cheese Bruschetta

PROCESS:

 

The Bread:

Slice a large loaf of French Bread in half lengthwise and place it on a cookie sheet crust side down. Spread with soft butter. Sprinkle it with salt, pepper, garlic and parmesan cheese. Bake at 400-degree oven until golden brown.

 

Caramelized Onions:

Peel and slice 4 large yellow onions and saute in butter over medium heat until they become dark brown and caramelized. This may seem like a lot of onions but they're gonna shrink as they cook.

 

Directions:

Spread the caramelized onions all over both halves of bread and burry it all in Blue Cheese crumbles! Remember! The better the Blue Cheese the better the Bruschetta! Bake in a 400-degree oven until golden brown and gorgeous. Cut into large chunks and WOOF!

 

I love to serve this bruschetta with Caesar Salad, a huge Juicy steak, and a Big Red Wine

 

Warning:

This recipe is potent, it may cause your breath to offend everyone within a two miles radius.

 

INGREDIENTS:

 

Bread: 1 loaf French bread  1 stick soft butter  1 teaspoon kosher salt  1 teaspoon black pepper  1 teaspoon garlic powder  1/2 cup grated parmesan cheese 

Caramelized Onions: 4 onions sliced  1 stick butter

1 pound blue cheese crumbles

  • PROCESS: Roast Tomatoes: Wash the tomatoes and remove the cores. Cut in half along the equator and squeeze out the seeds and juice. Lay the tomato halves on a baking sheet with the inside facing up. Drizzle with olive oil and sprinkle with salt, pepper and garlic. Pre-heat the oven to 325-degrees and roast the tomatoes for 20-30 minutes depending on the size of the tomatoes. When the tomatoes are done, allow them to cool to room temperature. After the tomatoes have cooled, pull the loose skin off and cut each half into six pieces. Roast Tomato Bruschetta: While the tomatoes are roasting, cut the loaf of bread into 1/2 inch slices and arrange on another baking pan. Brush the bread liberally with olive oil. Season the bread with salt and pepper. Sprinkle with grated parmesan cheese. Place the bread in the oven with the tomatoes and cook for about 10-minutes. To Eat: Place one fresh basil leaf on each bread slice, Top with a piece of roasted tomato and sprinkle with more fresh grated parmesan cheese. WOOF! INGREDIENTS: Roast Tomatoes: 4 medium sized tomatoes Olive oil kosher salt black pepper 1 teaspoon minced garlic Bruschetta: 1 loaf French or Italian Bread Olive Oil S&P Parmesan Cheese Fresh Basil Parmesan Cheese S&P to taste
  • PROCESS: The Dip: In a large saucepan at medium heat, melt the butter until the foam subsides, add the flour and cook to make roux. Cook the roux at low heat for about two minutes until it is tight and smooth with no butter weeping out of it. If you burn the roux, start over. Slowly add half and half, about a cup at a time, stirring constantly to incorporate and avoid roux lumps. Allow the sauce to simmer, stirring frequently with a whisk, rubber spatula or wooden spoon until the sauce becomes very thick like mayonnaise. Remove from the stove, and allow it to cool down to room temperature. Thaw and Squeeze ALL the liquid/juice from the Spinach. Stir spinach into sauce, add the remaining ingredients, stir. To Serve: Place the Spinach Dip into a microwave safe bowl, top it with cheddar cheese and wrap it with plastic wrap. Microwave it until the cheese melts and the dip is hot in the center. Unwrap and place on a serving platter. Top with chopped bacon bits, sour cream and diced red onions. Serve with assorted tortilla chips. INGREDIENTS: Spinach Dip: 1 stick of butter 3/4 cup flour 6 cups half and half 3 pounds frozen spinach 2 cups parmesan cheese 1/2 cup Franks Hot Sauce 1 tablespoon salt 1 tablespoon black pepper Toppings: 1 cup shredded cheddar 2 tablespoons chopped bacon 2 tablespoons diced red onion 2 tablespoons sour cream Your favorite tortilla chips
  • When it comes to chicken wings, there are many different ways to make them. The first question is breaded or not. Un-Breaded Wings: The original buffalo style wings were cooked and served whole, not breaded. Wings are deep fried naked until done and then some. They’re overcooked on purpose, so the meat becomes dried out, which makes it easier for the wings to absorb the sauce. Buffalo sauce is made by melting butter in a skillet and adding hot sauce and stirring with a whisk. Seasoning hot sauce with celery salt is optional. Mild Wing Sauce is equal parts of hot sauce and butter Medium Wing Sauce is 2 parts hot sauce 1 part butter Hot Wing Sauce is Straight Hot Sauce . If you want the sauce hotter, add minced jalapeno peppers or habaneros if you dare! I use Frank's Red Hot Sauce. Place the wings in a large tub with a TIGHT fitting lid, add the sauce, and cover with the lid and shake vigorously to absorb the sauce. Be careful not to get sauce all over yourself. Serve with extra sauce, so they can continue to absorb. Breaded Wings: The second technique is to bread the wings. Place flour in a large bowl, season with salt & pepper. Cut the wings into 3 pieces, discard the wing tips. Roll the wings in flour and fry in hot oil until they look like fried chicken. Here's another hot sauce technique: Melt the butter, don’t allow it to boil. Add the hot sauce in a slow stream while blending with an emulsion blender. This technique helps the sauce stay emulsified. Breaded wings should be dunked in the hot sauce carefully to avoid tearing off the breading. The breading should absorb the sauce.
