Dim Sum Green Beans

PROCESS:

 

Fry The Green Beans:

Heat 1 quart vegetable oil to 350 degrees. Fry the beans in batches until they are cooked and start to wrinkle, about 20-30 seconds! Remove the beans from the oil and allow to drain on paper towels until all beans are cooked.

 

In a large skillet:

Heat the Dim Sum & Den Sum Sauce, add the green beans and cook until hot. Transfer to a serving platter and sprinkle with the sesame seeds.

 

Dim Sum & Den Sum Sauce:

Place all ingredients in a small bowl and mix together.

 

*You may also fry the green beans, place them in the serving bowl and toss with sauce. It's a little easier and the results are about the same.

 

INGREDIENTS:

 

Fried Green Beans

1 pound fresh green beans

vegetable oil for frying

1 cup Dim Sum & Den Sum Sauce

1 tablespoon sesame seeds

 

Dim Sum & Den Sum Sauce

1 tablespoon garlic, minced

1 tablespoon ginger, minced

1 teaspoon sugar

3 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon cilantro, chopped

1 tablespoon white sesame seeds, toasted

1 tablespoon green onions, sliced

  • PROCESS: Use large Idaho baking potatoes (russets) Peel the potatoes and place them in cool water. Slice the potatoes into shoestrings on a mandolyn or by hand with a sharp knife. Immediately place the sliced potatoes in cool water and allow them to sit for 10-minutes to release some of their starch. This also helps them get and stay crispy. Because these fries are so thin, they do not need to be blanched or fried twice. If you cut your fries thicker than these, you will have to blanch them, see instructions below. Dry the potatoes: Remove the potatoes from the water and drain on paper towels, blotting them until dry. Water and hot oil are a dangerous combination. Notes about frying oil: Heat the oil in a deep pan or wok until it reaches 375 degrees before adding the fries. The temperature will go down when you add the fries. Be sure you have not too much oil in your pan that it overflows when you add the potatoes. Hot oil all over the stove is a dangerous mess! Start with we oil at 375 it will go down when you add the room temperature potatoes. The optimum frying temperature is between 350 and 375 degrees. Adjust the stove temperature so the oil stays at optimum temperature. Cooking: Allow the fries to come to room temperatures. Add to the hot oil, do not over crowd the cooking vessel. Turn or stir the fries frequently in the oil, until they are golden brown and crispy, about 10-minutes. Remove from the oil with a slotted spoon and drain on paper towels. Season immediately with salt and pepper and serve with your favorite burger. Blanching the fries: Thicker fries need to be cooked TWICE to get crispy. Simply par cook the potatoes as above and drain on paper towels. allow fries to cook for ten minutes at room temperature. You may also freeze the potatoes at this point. Re-fry the potatoes until golden brown and crispy. INGREDIENTS: 2 pounds baking potatoes oil for frying salt & pepper
  • PROCESS: I use red skin potatoes because of their hearty taste and texture. Feel free to substitute Idaho,Yukon Gold or your favorite potato. Cut the potatoes into quarters so they cook evenly. Place them in a pan and cover with salted water, boil until tender, drain and keep warm. Saute the garlic in 1/2 stick of butter over medium heat until it turns golden brown. We want the nutty earthy garlic taste... Be careful not to burn the garlic. Whip the potatoes with an electric mixer adding the garlic and one stick of butter. Leave them a little chunky for a rustic texture. Add the heavy cream, cheddar cheese, green onions and BACON! Season with kosher salt and pepper. INGREDIENTS: 2.5 pounds red skin potatoes 3 tablespoons garlic, chopped 1/2 stick butter 1 stick butter 3 oz heavy cream 2 cups shredded cheddar 1 cup sliced green onions 1/3 cup cooked bacon 1 teaspoon kosher salt 1 teaspoon black pepper
  • This is Mrs. Food Guru's recipe. Peel and slice the potatoes into 1" pieces.  Boil until fork tender. Test the potatoes for doneness by inserting a fork into one of the potato pieces. If the potatoes are soft, they are done, if they are still hard in the middle, cook longer.  Drain and mash.  Add the cream cheese and butter, beating until blended.  Add the remaining ingredients and beat until the potatoes are creamy without lumps.  Place potatoes in a greased casserole dish and top with shredded cheddar cheese.  Bake in a 400 degree oven for 20-25 minutes until bubbly and cheese is golden brown. INGREDIENTS: 1 five pound bag of potatoes 6 oz cream cheese, softened 3 cups sour cream 3 tablespoons butter 1 teaspoon garlic powder 2 cups cheddar cheese, shredded salt and pepper to taste
