PROCESS:
Place the filet of grouper in a pie pan or casserole dish.
Top it with a melted butter and sprinkle with FG's Seafood Spice. Place bread slices, cooked bacon, FG's Seafood Spice and paprika in the food processor. Pulse the food processor until everything is equally chopped. Add melted butter and shredded cheddar cheese to the food processor. Pulse to combine all ingredients.
Sprinkle the crumbs generously over the fish. Pour a little water in the pan with the fish and bake in a 400-degree oven for about 15-minutes. To test for doneness, insert a knife into the thickest part of the fish. If it slides in and out easily, the fish is done. If it sticks, cook the fish a little longer.
Cheese Sauce
Bring heavy cream to a boil. Add Velveta and stir until melted add shredded cheddar cheese. Stir with a spatula and finish with a few ounces of beer. To serve, pour some cheese sauce on a plate and top it with the fish.
