There are many ways to make simple syrup, this is the best I have found. I like the 2-1 ratio because we can make our drinks sweet without watering them down. If you think about it this is very important, we are maxing sweetness with half the water of regular simple syrup. This makes a huge difference in the finished cocktail or martini.
Combine sugar and water in a sauce pan and bring to a boil. Immediately remove from heat and cool.
For Rock Candy Syrup:
Use a 3/1 ratio Sugar/Water
Simple syrup will stay in a covered jar for a few weeks.

2 cups granulated sugar
