The first thing I learned in culinary school was how to prepare celery…

 

First we cut the bottom off the celery stock, wash the individual celery ribs and dry them with paper towels so they don’t slide around on the cutting board. Cut off the leaves and put them with the bottom to use in your stock pot

 

Celery Sticks:

 

Use a chef knife. Square up the ends and cut the ribs in half lengthwise. Then cut the halves in half again lengthwise. Cut these into thirds to create celery sticks….

 

To dice celery… We do the same thing as for sticks, but this time cut the celery into squares. This is large dice…

 

Small dice - cut the celery ribs in 6 sticks instead of four and make thinner diagonal slices which makes the squares smaller…. This is small diced celery….

  • A shallot is kind of like a cross between garlic and a red onion. They’re sweet and strong and used in lots of French recipes. To mince a shallot: Use a chef’s knife to cut off the top and the bottom of the shallot. Cut the shallot in half, and then peel it. If they have multiple sections, break them up. This is a fine diced shallot..! To Mince: use your chef knife in a rocking motion like this. Shallots give great depth to soups and sauces. Great in French recipes..!
  • To Grill or Roast red bell peppers: Wash them and rub them with olive oil. Place the on the HOT part of the grill and char the outside This allows the pepper to pick up some grill flavor and blisters the skin. Turn the peppers several times during the process, to char it on all sides. It’s OK to burn them a bit… When the peppers are done, wrap the in plastic wrap. Allow them to sit for about ten minutes so the skin lifts away from the meat. Be careful when unwrapping the peppers, because they may still be hot Cut the peppers in half, remove the seeds. Slice the peppers into large sections like this. Turn them over and scrape off the skin… These are grill roasted red bell peppers. Use the in salads, pasta, as toppings on pizza or puree to use in sauces.
  • Start by cutting off most of the stem. Remove the black fins, using a spoon, scrape the fins into a paper towel, discard. Leave the mushroom caps intact Mushrooms grow in dirt and fertilizer, wash them inside and out, dry with a paper towel. To Grill: Rub mushrooms with olive oil and season it with salt and pepper. Place in a hot part of the grill… cap down cook 3 minutes flip mushrooms and cook on the second side. Cook the mushrooms until some of the water cooks out and they wilt Grilled Portobello mushrooms are very meaty tasting. Slice them to serve with steaks … They’re also perfect on pizza or in pasta dishes
