For sushi you need wet hands, not to wet and not too dry… Just right.

Process

Place two middle fingers in your water bowl and pick up as much water as possible, rub your hands together and clap… you should be ready to go…

Your cutting board should also be damp when rolling sushi

* When rolling lots of sushi, it's a cool idea to wear Dr. Gloves and spray them with pan spray.
