Fresh Raspberries & Cream
Recipe makes 4 portions
2 pint fresh raspberries
For the cream:
2 cups of whipping cream
1/2 cup of sugar
1 tablespoon vanilla
1 teaspoon almond extract.
Pick through raspberries, remove any moldy ones
Rinse raspberries in cold water and drain on paper towels
Place the raspberries in martini glasses
Whipping the Cream:
Place the cream, sugar, vanilla and almond extract in a bowl,
Whip the cream until it has enough body to coat a spoon,
ladle some of this semi whipped cream over the berries,
Whip the remaining cream a little more to create whipped cream.
Top the berries with the whipped cream
garnish with shaved white or dark chocolate and fresh mint
These raspberries are great for desssert or breakfast.
Try this recipe with other fresh berries or fruit.
If you overwhip the cream, it will become grainy or even separate and turn into watery butter.
If that happens to you… don’t throw it out just strain it and save the butter for your toast.
