What is the Goal of Your Restaurant?

How well are you REALLY doing today?


Are you an owner who prays that your employee paychecks don’t bounce? Are you a manager who shows up every day, just trying to get through the week and collect your paycheck? Are you just plain burned out and looking for the exits? Or, Are you Conflicted - fired up one day - and ready to throw in the towel the next?


Are you a Star or The Future who wants to kick some ass and make a dent in the Culinary Universe? Is your goal to build an Excellent Restaurant that will stand the test of time and provide a GREAT place for your customers to celebrate their lives?


Is your goal to be a multi-unit operator and build 5, 10 or 20 restaurants that thrive?


Is Your Goal to be a People Builder – the person who encourages everyone around them to be a Better version of themselves TODAY - than they were yesterday?

Hey It’s Peter Harman The Food Guru here with your weekly Pep Talk… My goal is the teach restaurant owners, managers and chefs like you, to focus on Eight Basic Fundamentals that lead to a better life and financial freedom.


When it comes to goals there are three types of people…

  1. 80% of people, either have no goals or they have vague ambiguous goals. 80% of restaurant owners and managers just wander from one thing to another… like a tumbleweed rolling where ever the wind blows them…

  2. 14% have goals but do very little or nothing to move toward their goals.

  3. 5% of restaurant owners, managers and chefs - have goals – Written Goals that tell them where they are going and what they expect to achieve when they get there…. AND they take action to achieve their goals.

  4. 1% of people, have Written Goals AND they share them with their people.

Today, we are going to dissect each of these three groups to help you see which category you fit into and maybe help you move up to the next level and start kicking ass and having some FUN. Let’s get started…


GROUP NUMBER ONE: THE 80%

80% Of all American Restaurant Owners have NO goals. Period…


GROUP NUMBER TWO: THE 14%

14% of all restaurant owners actually have goals - clear goals – BUT most of them do very little to move forward toward their goals. This is because they are missing the key ingredient to achieving their goals and that ingredient is - ACTION. More accurately Consistent Action TOWARD a worthy goal.

  • Do you know what you want you want to achieve?

  • Do you have a specific goal for your restaurant?

  • Are your goals written on paper AND put in a place where you can see them every day – or are they hidden in a drawer or a note book in your briefcase or computer bag?

If you want to move from Group #1 to Group #2 - Here are three quotes that will help you.

  1. Earl Nightingale said - People with goals succeed because they know where they are going.

  2. Emerson said - We become what we think about all day long.

  3. And a very wise prophet once said - As you think – so shall you be…


GORUP THREE: The Top 5%

Only 5% of restaurant owners write their goals down AND take THE ACTION required to move toward the achievement of their goals. The effect of seeing your written goal every day will embed that goal - deeply into yourself sub-conscience mind. Then, your subconscious mind will be work 24 hours a day – trying to find ways to help you achieve your goal.


You simply set a GOAL. Then, you divide it into small BITE SIZED pieces. Small bite sized pieces are really important. Let’s say you want to eat a 16 ounce ribeye steak. You don’t eat it all in one bite. You slice it into bite sized pieces and eat them one at a time and before you know it – Your delicious corn fed ribeye has been devoured.


It’s the same thing with goals - you break them into smaller pieces and parts. Let’s imagine we want to improve our sales. We break our goals down into manageable or smaller goals

We have 1 week goals, 1 month goals, Quarterly goals and a big annual goal.


For example, let’s say we want to increase sales. We set a Goal to increase sales by 1% every Week. Then, by the end of the month we should have a 4% sales increase. Then, by the end of the year if we stay on target we should have a 50% Sales improvement… Wow!


I know what you are saying, I can hear you all the way up here in Iowa. A 50% sales increase in one year – Really… YES - That’s exactly what I’m saying and…


The whole process start with a simple little goal… 1% better every week. You can use the 1% improvement for everything from increasing sales, improving food cost, bar cost, labor cost and even - Attendance. All you do is Set The Goal - THEN you Write your goals on paper – AND then, put them where you will see them every day. If you want your restaurant to be in the top 5% of all restaurants, all you have to do, is set a goal and go after it with consistent terminator like focus.


If you want to really do some amazing things – Share Your Goals with Your people - Get your goal to be their goal too…


GROUP NUMBER FOUR: THE 1%

1% of restaurant owners have a goal that is WORTHY of their time and talent - AND they share that goal with their people - AND that goal becomes the GOAL of the managers and the staff - WOW!


Here is the MAGIC…

Remember when I said that written goals work because they get inside your subconscious mind and your mind works 24 hours a day to help you find a solution..?

WHAT IF – You could infect your people with your goal and they fell in love with it too?


When you share your goals with your people - You will have your people and their amazing brains working 24 hours a day to help you achieving the goal – WOW! How about that…


IN CONCLUSION:

Only 1% of all restaurant owners in America have a set goal… AND share it with their managers and staff.


It doesn’t matter what your goal is…

Your goal could be to increase sales buy 10% - Twice…

Your goal could be to have 100% Attendance for every shift – every week…

Your goal could be to Serve Hot Food – Hot and Cold Food – Cold…

Your goal could be to have your people execute the steps of service perfectly at every table.

Your goal could be a clean restaurant and the front lock door locked at the end of the night.


All you have to do is SET a GOAL – PRINT IT – and hang it on the wall where every manager and team member will see - everyday. Then, Take Action! Move Toward the Goal.


Here's a smart idea. Keep the people who work to help you move forward toward your goal and replace the ones who pull you backwards away from your goal.


PEOPLE LOVE GOALS… It gives them something to aim for… Something concrete to do…


Who would you rather work for? A person who has no goals, a person who just kind of shows up every day and goes through the motions?


OR - Would you rather work for a person who has a Noble goal AND works their ass off every day to achieve that GOAL?


Don’t we all want to be part of a team that is trying to accomplish a NOBLE and WORTHY MISSION…? Of course we do…
