These tasty little dumplings are easy to make!
1 pound ground pork
1 teaspoon black pepper
1 teaspoon hot sauce
1 teaspoon minced garlic
1 teaspoon minced ginger
1 tablespoon fresh mint
1 tablespoon fresh basil
1 tablespoon fresh cilantro
3 tablespoons soy sauce
Won-Ton wrappers, round or square
1 egg yolk to seal dumplings
1 tablespoons sesame oil
1/4 cup minced onion
1 tablespoon minced ginger
1/2 cup hoisin sauce
1 tablespoon hot sauce
1/2 cup white wine
1 lemon juiced
3 tablespoons cilantro
Lemon Zest, from lemon above
thin sliced green onions
Mince garlic and ginger, chop herbs, combine with other pork filling ingredients in a bowl, mix well, set aside.
Stuffing the Won-Tons:
Place an egg yolk is a small bowl.
Place wonton on counter, rub a little of the egg mixture around the edges of the won-ton wraper.
Place a small amount of the pork filling in the center, fold over, press down on edges to seal.
I use a small PVC pipe cap to press and seal my dumplings.
Repeat until you have wrapped all the filling in wontons.
Cook dumplings in boiling water until they float.
If you prefer a crispy dumpling, You may also fry the dumplings in hot oil.
For the Sauce:
Heat sesame oil in a skillet add onion and ginger, and heat through.
Add hoisin, stir.
Add wine, stir.
Squeeze in fresh lemon juice, stir.
Add cilantro and taste, you may want to add a little more wine or lemon to adjust the sauce.
*some hoisin sauces are very salty and will need to be thinned down.
*You may also add a little rice wine vinegar
* Try adding a little Yuzu.
Plate dumplings, pour sauce over dumplings, garnish with sliced green onions and lemon or orange zest.
