Old Time Classic Chocolate Cake - Better than anything from a Box!
2 cups sugar
1 stick butter, room temperature
2 whole large eggs
1/2 cup cold coffee
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa powder plus
2 tablespoons cocoa powder
1 cup hot water
1 teaspoon good vanilla
Place butter and sugar in a bowl, mix together
Add the eggs and beat 2 minutes
Add the cold coffee, beat 1 minute
(If the batter looks a little weird at this point, don't worry, it's OK)
Mix together the dry ingredients, flour, baking powder, salt, cocoa,
Sift into the sugar mixture. Beat until combined.
Add the hot water and vanilla, mix until combined
Spray or grease (2) 9-inch round cake pans
Line bottom with wax paper, spray paper
Pour batter evenly between the two pans
Bake at 350 degrees for 25 minutes or so.
Check center with a toothpick.
Allow cakes to cool to room temperature
Frost with the Food Guru's Chocolate Ganache Frosting (recipe in Dessert Chapter).
