1 stick butter (1/2 cup)
1/4 teaspoon table salt
1 teaspoon lemon rind
2 large eggs
2 cups all-purpose flour
1 1/2 teaspoons baking powder
Pre-heat oven to 350-degrees F.
Place butter in mixing bowl, allow it to come to room temperature.
Add sugar, salt and lemon rind, mix until ingredients are blended.
Add one egg, mix.
add the second egg, mix.
Add flour and baking powder, and pecans, mix ONLY long enough to combine.
Do Not overmix.
Line a baking pan with parchment paper.
Form dough into a 13-inch long by 3-inch wide log.
Bake until it is light golden brown, about 40 minutes.
Cool at room temperature for 30 minutes.
Place the cooked Biscotti on a cutting board
Slice into 1/2 to 3/4 inch slices.
Place slices on a sheet pan
Bake for an additional 15 minutes.
Remove biscotti from the pan and cool on a wire rack.
*dip half in melted chocolate and top with toasted almonds
Serve with Hot Coffee
