6 ripe Haas Avocados
1/2 cup red onion, minced
1 jalapeno pepper, minced
1 teaspoon garlic, minced
1 teaspoon hot sauce (Tabasco or Frank's)
2 tablespoons olive oil
1/2 cup fresh cilantro, chopped (stems and leaves)
1 teaspoon salt
1 teaspoon black pepper
2 limes, juiced
2 lemons, juiced
1 orange, juiced
1/2 cup of your favorite salsa
(editors cut the olive oil from the video, it is important to the recipe)
Select the Avocados:
Avocados should be firm but not hard, soft, but not mushy. I prefer the Haas avocado.
Slice around the outside, lengthwise, pole to pole (not around the equator)
Twist the two halves of the avocado in opposite directions, and pop open
Tap the seed with a knife and twist to remove.
Slice the avocado flesh with a paring knife lengthwise and then turn the avocado and slice again to form small squares. Be careful not to slice through the skin and into your skin.
Use a spoon and scoop the perfectly diced avocado into a bowl.
Add red onion, jalapeno peppers, garlic, hot sauce, olive oil, cilantro, salt, black pepper, lime juice, lemon juice, orange juice and salsa. Stir the guacamole well and refrigerate for about an hour before serving to allow the flavors to marry.

Serve at room temperature with a variety of fresh chips made from flour tortillas, corn tortillas, and fried plantains for fun and dimension.
I like to use lemon, lime and orange juice. The lime is tart, the lemon cirtussy, and the orange is sweet, this creates great flavor depth in the guacamole.
