Clam Chowder

This is Great Clam Chowder


1 stick butter
2 cups onion, diced
1 cup celery, diced
1/2 teaspoon thyme leaves
1/2 teaspoon dried dill weed 
1/2 tablespoon Steak Spice
1 cup flour

1 quart clam juice
1 quart chopped clams
2 tablespoon clam base
2 cups diced potatoes
1/2 cup corn kernels

Steak Spice 



Melt butter in a large sauce pan, add onions, celery, thyme, dill and Steak Spice, cook until onions are tender. 
Add flour a little at a time, stir constantly to form a roux, cook for one minute.

Add clam juice a cup at a time and stir to incorporate with each addition. 
Add clams and potatoes, simmer for 20 minutes.
Add heavy cream, simmer 5 minutes
Taste and adjust flavor by adding Steak Spice or salt and pepper.

For an amazingly rich chowder finish it with another stick of butter!
Serve with oyster crackers or a loaf of great bread.

*This recipe would also make a fantastic sauce for pasta, just don't add the potatoes.
