Chicken Satay

Chicken Satay with grilled pineapple, cucumber salad and Peanut Sauce

Ingredients

Chicken Satay's 
1 pound chicken thigh 
1/4 cup sesame oil 
1/4 cup soy sauce
1 tablespoons ORIENTAL SPICE
1/2 cup cilantro, chopped

Peanut Sauce
1/2 cup peanut butter 
1/4 cup soy sauce 
1/3 cup pineapple juice 
1/2 cup coconut milk
2 tablespoons fresh cilantro 
1 teaspoon ORIENTAL SPICE
1 teaspoons red curry paste

Process

Cut the chicken into slices and thread evenly on 4 skewers. 
Place on a platter, coat with vegetable oil and sprinkle generously with ORIENTAL MADNESS.  Grill or broil. 
* you may substitute vegetable oil for sesame oil
* you may use either chicken breast or thigh, FG prefers thighs because they stay moist.

TIP: 
If you are using wooden skewers, soak them in water for about an hour before using. 
This prevents them from burning on the grill, or at least makes it more managable. 

SIMPLE PEANUT SAUCE: 
Heat all ingredients in a sauce pan, mix well.
Serve on the side as a dipping sauce. 
If the sauce gets too thick, thin it down with hot green teaor apple juice

TIP: Be careful when using pineapple juice in a marinade as it will often over tenderize and make meats mushy.
