Antipasta



This will make a fabulous centerpiece for your next party, surrond it with your favorite appetizers and enjoy!

Ingredients

1/2 pound provolone, sliced 
1/2 pound salami, sliced 
1/2 pound proscuitto, sliced 
1/2 pound fresh mozzarella, sliced 
1 ripe tomato, sliced 
6 pepperoncini peppers 
12 kalamata olives 
12 colossal pimento stuffed olives 
6 artichoke hearts, canned 
1 red bell pepper, roasted, cored and seeded 
1 tablespoon capers 
1/4 cup shredded parmesan 
1/4 cup basil, chiffonade (sliced razor thin) 
Kosher salt / Black pepper, fresh ground 
Extra Virgin Olive Oil

Process

On a festive platter arrange provolone in a row by overlapping slices (like fanning out a deck of cards) then repeat this process with salami, proscuitto, fresh mozzarella and tomatoes. Randomly sprinkle with pepperoncini peppers, olives, artichokes, capers, basil and parmesan. 
Drizzle extra virgin olive oil all over the whole deal. Sprinkle with fresh ground salt and pepper.

  • You can use virtually anything on an anitpasti platter. Try grilled shrimp, calamari, lobster, marinated mushrooms, fennel, various cheeses, meats, etc.
  • Leftovers from this antipasti platter can be mixed with lettuce and turned into a fabulous salad the next day.  
  • Antipasti platters are beautiful arrangements of delicious and colorful foods, they are a great addition to a party. You can use virtually anything on an anitpasti platter. Try grilled shrimp, calamari, lobster, marinated mushrooms, fennel, various cheeses, meats, etc.
