1/2 pound provolone, sliced
1/2 pound salami, sliced
1/2 pound proscuitto, sliced
1/2 pound fresh mozzarella, sliced
1 ripe tomato, sliced
6 pepperoncini peppers
12 kalamata olives
12 colossal pimento stuffed olives
6 artichoke hearts, canned
1 red bell pepper, roasted, cored and seeded
1 tablespoon capers
1/4 cup shredded parmesan
1/4 cup basil, chiffonade (sliced razor thin)
Kosher salt / Black pepper, fresh ground
Extra Virgin Olive Oil
On a festive platter arrange provolone in a row by overlapping slices (like fanning out a deck of cards) then repeat this process with salami, proscuitto, fresh mozzarella and tomatoes. Randomly sprinkle with pepperoncini peppers, olives, artichokes, capers, basil and parmesan.
Drizzle extra virgin olive oil all over the whole deal. Sprinkle with fresh ground salt and pepper.
